Pineapple Shrimp Stir Fry

Ingredients - Serves 4
- Sesame seeds - 1 tablespoon, for garnish
- Green onions - 2, sliced, for garnish
- Cooked rice - 4 cups, for serving
- Salt and pepper - To taste
- Water - 1/4 cup
- Cornstarch - 1 tablespoon
- Sesame oil - 1 tablespoon
- Honey - 2 tablespoons
- Soy sauce - 3 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Onion - 1, sliced
- Bell peppers - 2, sliced
- Pineapple - 2 cups, diced
- Shrimp - 1 lb, peeled and deveined
Let's Get Started
- In a small bowl, whisk together soy sauce, honey, sesame oil, cornstarch, water, garlic, and ginger to make the sauce.
- Heat a large skillet or wok over medium-high heat. Add the shrimp and cook until pink and cooked through, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
- In the same skillet, add the sliced bell peppers and onion. Stir fry for 2-3 minutes until slightly softened.
- Add the diced pineapple to the skillet and cook for another 2 minutes.
