Pineapple Shrimp Stir Fry

  1. In a small bowl, whisk together soy sauce, honey, sesame oil, cornstarch, water, garlic, and ginger to make the sauce.
  2. Heat a large skillet or wok over medium-high heat. Add the shrimp and cook until pink and cooked through, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
  3. In the same skillet, add the sliced bell peppers and onion. Stir fry for 2-3 minutes until slightly softened.
  4. Add the diced pineapple to the skillet and cook for another 2 minutes.
  5. Pour the sauce over the vegetables and pineapple in the skillet. Cook for 1-2 minutes until the sauce thickens.
  6. Add the cooked shrimp back to the skillet and toss to coat everything in the sauce. Cook for an additional 1-2 minutes to heat through.
  7. Serve the pineapple shrimp stir fry over cooked rice.
  8. Garnish with sliced green onions and sesame seeds before serving.
