Pineapple Fried Rice

Ingredients - Serves 4

Let's Get Started

  1. Heat vegetable oil in a large skillet or wok over medium heat.
  2. Add minced garlic and chopped scallions, and sauté for 1-2 minutes until fragrant.
  3. Add shrimp and cook until pink and cooked through, about 3-4 minutes.
  4. Push the shrimp to one side of the skillet and add diced chicken breast to the other side. Cook until chicken is heated through.
  5. Add frozen peas and carrots, and cook for an additional 2 minutes.
  6. Push the ingredients to one side of the skillet and add chilled cooked rice to the other side. Break up any clumps of rice with a spatula.
  7. Drizzle soy sauce and fish sauce over the rice, and sprinkle with curry powder. Mix everything together until well combined.
  8. Add diced pineapple and cook for another 2 minutes, stirring occasionally.
  9. Season with salt and pepper to taste.
  10. Remove from heat and garnish with fresh cilantro.
  11. Serve hot and enjoy!
