Pineapple Fried Rice
This delicious pineapple fried rice is a perfect blend of sweet and savory flavors, packed with colorful vegetables and juicy pineapple chunks.
Ingredients - Serves 4
- Cilantro - For garnish
- Salt and pepper - To taste
- Vegetable oil - 2 tablespoons
- Curry powder - 1 teaspoon
- Fish sauce - 1 tablespoon
- Soy sauce - 3 tablespoons
- Garlic - 2 cloves, minced
- Scallions - 4, chopped
- Frozen peas and carrots - 1/2 cup
- Chicken breast - 1/2 cup, cooked and diced
- Shrimp - 1/2 pound, peeled and deveined
- Pineapple - 1 cup, diced
- Cooked rice - 4 cups, chilled
Let's Get Started
- Heat vegetable oil in a large skillet or wok over medium heat.
- Add minced garlic and chopped scallions, and sauté for 1-2 minutes until fragrant.
- Add shrimp and cook until pink and cooked through, about 3-4 minutes.
- Push the shrimp to one side of the skillet and add diced chicken breast to the other side. Cook until chicken is heated through.
- Add frozen peas and carrots, and cook for an additional 2 minutes.
- Push the ingredients to one side of the skillet and add chilled cooked rice to the other side. Break up any clumps of rice with a spatula.
- Drizzle soy sauce and fish sauce over the rice, and sprinkle with curry powder. Mix everything together until well combined.
- Add diced pineapple and cook for another 2 minutes, stirring occasionally.
- Season with salt and pepper to taste.
- Remove from heat and garnish with fresh cilantro.
- Serve hot and enjoy!
