Pigeon Egg Dumplings

Ingredients - Serves 4
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Green onions - 1/4 cup, chopped
- Ground pork - 1 cup
- Salt - 1 teaspoon
- Water - 1 cup
- All-purpose flour - 2 cups
- Pigeon eggs - 12
Let's Get Started
- In a large bowl, mix the flour, water, and salt to form a dough. Knead until smooth, then let rest for 20 minutes.
- In another bowl, mix the ground pork, green onions, soy sauce, and sesame oil.
- Roll out the dough and cut into small circles. Place a small spoonful of the pork mixture in the center of each circle.
- Carefully crack a pigeon egg into each dumpling, then fold the dough over and seal the edges.
- Bring a pot of water to a boil, then add the dumplings. Cook for about 10 minutes, or until the dumplings float to the top and the dough is cooked through.
- Serve hot with additional soy sauce for dipping.
