  1. In a large bowl, mix the flour, water, and salt to form a dough. Knead until smooth, then let rest for 20 minutes.
  2. In another bowl, mix the ground pork, green onions, soy sauce, and sesame oil.
  3. Roll out the dough and cut into small circles. Place a small spoonful of the pork mixture in the center of each circle.
  4. Carefully crack a pigeon egg into each dumpling, then fold the dough over and seal the edges.
  5. Bring a pot of water to a boil, then add the dumplings. Cook for about 10 minutes, or until the dumplings float to the top and the dough is cooked through.
  6. Serve hot with additional soy sauce for dipping.
