Ingredients - Serves 6

  1. In a large bowl, combine the flour, water, egg, and salt. Mix until a dough forms.
  2. Knead the dough on a floured surface until smooth and elastic, about 5 minutes.
  3. Cover the dough with a damp cloth and let it rest for 30 minutes.
  4. In a skillet, melt the butter over medium heat. Add the chopped onion and cook until golden brown.
  5. In a separate bowl, mix the mashed potatoes with the sautéed onions, sour cream, salt, and pepper.
  6. Roll out the dough on a floured surface until it is about 1/8 inch thick.
  7. Using a round cookie cutter or a glass, cut out circles from the dough.
  8. Place a spoonful of the potato filling in the center of each dough circle.
  9. Fold the dough over the filling to form a half-moon shape. Press the edges together to seal.
  10. Bring a large pot of salted water to a boil. Cook the pierogi in batches for about 5 minutes, or until they float to the surface.
  11. Remove the cooked pierogi from the water using a slotted spoon and transfer them to a plate.
  12. Serve the pierogi hot with sour cream or melted butter.
