Pierogi
Pierogi are traditional Polish dumplings filled with various ingredients and served with sour cream or melted butter.
Ingredients - Serves 6
- Salt and pepper - To taste
- Sour cream - 1/4 cup
- Butter - 2 tablespoons
- Onion - 1 medium, finely chopped
- Potatoes - 3 medium, boiled and mashed
- Salt - 1/2 teaspoon
- Egg - 1
- Water - 1/2 cup
- All-purpose flour - 2 cups
Let's Get Started
- In a large bowl, combine the flour, water, egg, and salt. Mix until a dough forms.
- Knead the dough on a floured surface until smooth and elastic, about 5 minutes.
- Cover the dough with a damp cloth and let it rest for 30 minutes.
- In a skillet, melt the butter over medium heat. Add the chopped onion and cook until golden brown.
- In a separate bowl, mix the mashed potatoes with the sautéed onions, sour cream, salt, and pepper.
- Roll out the dough on a floured surface until it is about 1/8 inch thick.
- Using a round cookie cutter or a glass, cut out circles from the dough.
- Place a spoonful of the potato filling in the center of each dough circle.
- Fold the dough over the filling to form a half-moon shape. Press the edges together to seal.
- Bring a large pot of salted water to a boil. Cook the pierogi in batches for about 5 minutes, or until they float to the surface.
- Remove the cooked pierogi from the water using a slotted spoon and transfer them to a plate.
- Serve the pierogi hot with sour cream or melted butter.
