Pesto Chicken and Vegetable Stir Fry
This delicious stir fry combines tender chicken, fresh vegetables, and flavorful pesto sauce.
Ingredients - Serves 4
- Salt and pepper - To taste
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Pesto sauce - 1/4 cup
- Broccoli florets - 1 cup
- Zucchini - 1, sliced
- Bell peppers - 2, sliced
- Chicken breast - 2, boneless and skinless, sliced
Let's Get Started
- Heat olive oil in a large skillet or wok over medium-high heat.
- Add chicken slices and cook until browned and cooked through, about 5-6 minutes. Remove from the skillet and set aside.
- In the same skillet, add garlic and sauté for 1 minute.
- Add bell peppers, zucchini, and broccoli florets. Stir fry for 3-4 minutes, or until vegetables are crisp-tender.
- Return the cooked chicken to the skillet and add pesto sauce. Stir well to coat everything evenly.
- Cook for an additional 2-3 minutes, or until heated through.
- Season with salt and pepper to taste.
