  1. In a heavy-bottomed saucepan, combine the sugar, corn syrup, and water. Heat over medium heat, stirring until the sugar has dissolved.
  2. Once the sugar has dissolved, increase the heat to high and bring the mixture to a boil without stirring. Boil until the mixture reaches 300°F on a candy thermometer.
  3. Remove the saucepan from the heat and carefully stir in the peppermint extract and food coloring.
  4. Pour the mixture onto a silicone baking mat or a greased baking sheet, and allow it to cool slightly. When it is cool enough to handle but still pliable, shape it into a pig shape.
  5. Allow the peppermint pig to cool completely, then dust it with powdered sugar before serving.
