Peppermint Pig
A traditional holiday treat, the Peppermint Pig is a festive candy that is as fun to make as it is to eat.
Ingredients - Serves 10
- Powdered sugar - For dusting
- Red food coloring - 2 drops
- Peppermint extract - 1/2 teaspoon
- Water - 1/2 cup
- Light corn syrup - 1/2 cup
- Sugar - 2 cups
Let's Get Started
- In a heavy-bottomed saucepan, combine the sugar, corn syrup, and water. Heat over medium heat, stirring until the sugar has dissolved.
- Once the sugar has dissolved, increase the heat to high and bring the mixture to a boil without stirring. Boil until the mixture reaches 300°F on a candy thermometer.
- Remove the saucepan from the heat and carefully stir in the peppermint extract and food coloring.
- Pour the mixture onto a silicone baking mat or a greased baking sheet, and allow it to cool slightly. When it is cool enough to handle but still pliable, shape it into a pig shape.
- Allow the peppermint pig to cool completely, then dust it with powdered sugar before serving.
