  1. Season the beef chunks with salt and half of the black pepper.
  2. In a large pot, sear the beef chunks on all sides until browned. Remove the beef from the pot and set aside.
  3. In the same pot, add the garlic and cook until fragrant.
  4. Add the tomato paste and the remaining black pepper, stir to combine.
  5. Return the beef to the pot and add the red wine and rosemary sprigs.
  6. Cover the pot and simmer on low heat for about 3 hours, or until the beef is tender and the sauce has thickened.
  7. Adjust the seasoning if necessary, and serve the peposo hot with crusty bread or polenta.
