Peposo
Peposo is a traditional Tuscan dish, a slow-cooked beef stew seasoned generously with black pepper and garlic. It's typically served with a side of crusty bread or polenta.
Ingredients - Serves 4
- Rosemary sprigs - 2
- Salt - To taste
- Tomato paste - 2 tablespoons
- Red wine - 750 ml
- Garlic - 6 cloves, minced
- Black pepper - 2 tablespoons, freshly ground
- Beef chuck roast - 1.5 kg, cut into large chunks
Let's Get Started
- Season the beef chunks with salt and half of the black pepper.
- In a large pot, sear the beef chunks on all sides until browned. Remove the beef from the pot and set aside.
- In the same pot, add the garlic and cook until fragrant.
- Add the tomato paste and the remaining black pepper, stir to combine.
- Return the beef to the pot and add the red wine and rosemary sprigs.
- Cover the pot and simmer on low heat for about 3 hours, or until the beef is tender and the sauce has thickened.
- Adjust the seasoning if necessary, and serve the peposo hot with crusty bread or polenta.
