  1. In a shallow dish, whisk together the eggs, milk, vanilla extract, and cinnamon.
  2. Dip each bread slice into the egg mixture, allowing it to soak for a few seconds on each side.
  3. Heat a large non-stick skillet or griddle over medium heat and melt 1 tablespoon of butter.
  4. Place the soaked bread slices onto the skillet and cook until golden brown, about 2-3 minutes per side.
  5. Remove the cooked French toast from the skillet and set aside.
  6. In the same skillet, melt the remaining tablespoon of butter.
  7. Add the sliced peaches and apricots to the skillet and cook for 2-3 minutes, until softened.
  8. Serve the French toast topped with the cooked peaches and apricots.
  9. Drizzle with maple syrup and sprinkle with additional cinnamon, if desired.
