Pea Curry
This flavorful pea curry is made with green peas, spices, and coconut milk.
Ingredients - Serves 4
- Fresh cilantro - For garnish
- Vegetable oil - 2 tablespoons
- Salt - To taste
- Chili powder - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Cumin - 1 teaspoon
- Curry powder - 2 teaspoons
- Coconut milk - 1 can (400ml)
- Tomato - 1 large, chopped
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Onion - 1 medium, finely chopped
- Green peas - 2 cups
Let's Get Started
- Heat vegetable oil in a pan over medium heat.
- Add the chopped onion and cook until it becomes translucent, about 5 minutes.
- Add minced garlic and grated ginger to the pan and cook for another 2 minutes.
- Add the chopped tomato and cook until it softens, about 3-4 minutes.
- Add curry powder, cumin, turmeric, chili powder, and salt to the pan. Stir well to combine.
- Add the green peas and coconut milk to the pan. Stir well and bring to a simmer.
- Cover the pan and let the curry simmer for about 10 minutes, or until the peas are cooked through.
- Garnish with fresh cilantro and serve hot with rice or naan bread.
