Ingredients - Serves 4

Let's Get Started

  1. Heat 2 tablespoons of butter in a pan. Add the chopped onions and sauté until they turn translucent.
  2. Add the chopped tomatoes and cook until they are soft.
  3. Add the chopped bell peppers, peas, carrots, and cauliflower. Cook until they are soft.
  4. Add the pav bhaji masala and salt. Mix well.
  5. Add the mashed potatoes and mix well. Cook for 5-7 minutes.
  6. Mash the vegetables with a masher until it becomes a thick curry.
  7. In another pan, heat the remaining butter and toast the pav (dinner rolls) on both sides.
  8. Serve the bhaji with the toasted pav, a lemon wedge, and garnish with chopped cilantro.
