Pav Bhaji
Pav Bhaji is a popular Indian street food where Pav (dinner rolls) are served with Bhaji, a thick and spicy vegetable curry.
Ingredients - Serves 4
- Chopped cilantro - for garnish
- Lemon wedges - for serving
- Pav (dinner rolls) - 8
- Salt - to taste
- Butter - 4 tablespoons
- Pav bhaji masala - 2 tablespoons
- Tomatoes - 2 medium, finely chopped
- Onions - 2 medium, finely chopped
- Bell peppers - 1/2 cup, finely chopped
- Carrots - 1/2 cup, finely chopped
- Peas - 1/2 cup
- Cauliflower - 1 cup, finely chopped
- Potatoes - 2 medium, boiled and mashed
Let's Get Started
- Heat 2 tablespoons of butter in a pan. Add the chopped onions and sauté until they turn translucent.
- Add the chopped tomatoes and cook until they are soft.
- Add the chopped bell peppers, peas, carrots, and cauliflower. Cook until they are soft.
- Add the pav bhaji masala and salt. Mix well.
- Add the mashed potatoes and mix well. Cook for 5-7 minutes.
- Mash the vegetables with a masher until it becomes a thick curry.
- In another pan, heat the remaining butter and toast the pav (dinner rolls) on both sides.
- Serve the bhaji with the toasted pav, a lemon wedge, and garnish with chopped cilantro.
