Pav Bhaji
Pav Bhaji is a popular Indian street food where Pav (dinner rolls) are served with Bhaji, a thick and spicy potato-based curry.
Ingredients - Serves 4
- Fresh coriander - For garnish
- Lemon wedges - For serving
- Pav (dinner rolls) - 8
- Salt - To taste
- Butter - 3 tablespoons
- Pav bhaji masala - 2 tablespoons
- Green peas - 1/2 cup, boiled
- Tomatoes - 2 large, finely chopped
- Onions - 2 medium, finely chopped
- Mixed vegetables - 1 cup, finely chopped
- Potatoes - 2 large, boiled and mashed
Let's Get Started
- Heat 2 tablespoons of butter in a pan. Add the chopped onions and sauté until they turn translucent.
- Add the chopped tomatoes and cook until they are soft.
- Add the chopped vegetables and green peas to the pan and cook until they are soft.
- Add the pav bhaji masala and salt to the pan and mix well.
- Add the mashed potatoes to the pan and mix well. Cook for a few minutes until all the ingredients are well combined.
- In a separate pan, heat the remaining butter and lightly toast the pav (dinner rolls) on both sides.
- Serve the bhaji hot with the toasted pav, a lemon wedge, and garnish with fresh coriander.
