Pastrami Pho
A unique twist on the traditional Vietnamese soup, this Pastrami Pho combines the rich flavors of pastrami with the aromatic spices of pho.
Ingredients - Serves 4
- Lime wedges - 4
- Fresh basil - 1/2 cup
- Bean sprouts - 1 cup
- Rice noodles - 1 pound
- Fish sauce - 2 tablespoons
- Cinnamon stick - 1
- Cloves - 6 pieces
- Star anise - 5 pieces
- Ginger - 1 piece, about 2 inches
- Onions - 2 large, halved
- Beef bones - 2 pounds
- Pastrami - 1 pound, thinly sliced
Let's Get Started
- Place the beef bones, onions, ginger, star anise, cloves, and cinnamon stick in a large pot. Cover with water and bring to a boil.
- Reduce the heat to low and simmer for 2 hours.
- Strain the broth and return it to the pot. Add the fish sauce and pastrami and simmer for another 30 minutes.
- While the broth is simmering, prepare the rice noodles according to the package instructions.
- Divide the noodles among 4 bowls. Ladle the broth and pastrami over the noodles.
- Top with bean sprouts, fresh basil, and a squeeze of lime. Serve hot.
