Let's Get Started

  1. Place the beef bones, onions, ginger, star anise, cloves, and cinnamon stick in a large pot. Cover with water and bring to a boil.
  2. Reduce the heat to low and simmer for 2 hours.
  3. Strain the broth and return it to the pot. Add the fish sauce and pastrami and simmer for another 30 minutes.
  4. While the broth is simmering, prepare the rice noodles according to the package instructions.
  5. Divide the noodles among 4 bowls. Ladle the broth and pastrami over the noodles.
  6. Top with bean sprouts, fresh basil, and a squeeze of lime. Serve hot.
