Pastrami and Squash Gratin
This hearty gratin combines the savory flavor of pastrami with the sweetness of butternut squash, all topped with a crispy breadcrumb topping.
Ingredients - Serves 6
- Salt and pepper - To taste
- Breadcrumbs - 1 cup
- Parmesan cheese - 1 cup, grated
- Heavy cream - 1 cup
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Pastrami - 1 pound, sliced
- Butternut squash - 1 large, peeled and cubed

- Preheat the oven to 375°F.
- Toss the butternut squash cubes with the olive oil, garlic, salt, and pepper. Spread out on a baking sheet and roast for 20 minutes, or until tender.
