Eggs in Purgatory
Eggs in Purgatory is a simple and flavorful dish made with eggs poached in a spicy tomato sauce.
Ingredients - Serves 2
- Grated parmesan cheese - 1/4 cup
- Fresh basil leaves - A handful, torn
- Eggs - 4 large
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Canned diced tomatoes - 1 can (14.5 ounces)
- Crushed red pepper flakes - 1/2 teaspoon
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large skillet over medium heat.
- Add the garlic and red pepper flakes and cook until the garlic is golden, about 1 minute.
