Ingredients - Serves 4

Let's Get Started

  1. Slice the aubergines into 1cm thick slices and sprinkle with salt. Leave to sit for 30 minutes, then rinse and pat dry.
  2. Heat 2 tablespoons of the olive oil in a pan and fry the aubergine slices until golden brown on both sides. Set aside.
  3. In the same pan, add the remaining olive oil and sauté the onion and garlic until soft.
  4. Add the tomato sauce and simmer for 10 minutes.
  5. Preheat the oven to 180°C (350°F).
  6. In a baking dish, layer the aubergine slices, tomato sauce, mozzarella, parmesan, and basil. Repeat the layers until all ingredients are used, finishing with a layer of cheese.
  7. Bake in the oven for 30 minutes, or until the cheese is golden and bubbly.
  8. Allow to cool for a few minutes before serving.
