Parmigiana Di Melanzane
Parmigiana di Melanzane is a classic Italian dish made with aubergine, tomato sauce, mozzarella cheese, and parmesan. It's a delicious and hearty dish that's perfect for any occasion.
Ingredients - Serves 4
- Basil - A handful, chopped
- Parmesan cheese - 1/2 cup, grated
- Mozzarella cheese - 2 cups, shredded
- Tomato sauce - 2 cups
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Olive oil - 3 tablespoons
- Salt - 1 teaspoon
- Aubergine - 2 large
Let's Get Started
- Slice the aubergines into 1cm thick slices and sprinkle with salt. Leave to sit for 30 minutes, then rinse and pat dry.
- Heat 2 tablespoons of the olive oil in a pan and fry the aubergine slices until golden brown on both sides. Set aside.
- In the same pan, add the remaining olive oil and sauté the onion and garlic until soft.
- Add the tomato sauce and simmer for 10 minutes.
- Preheat the oven to 180°C (350°F).
- In a baking dish, layer the aubergine slices, tomato sauce, mozzarella, parmesan, and basil. Repeat the layers until all ingredients are used, finishing with a layer of cheese.
- Bake in the oven for 30 minutes, or until the cheese is golden and bubbly.
- Allow to cool for a few minutes before serving.
