- Olive oil - 2 tablespoons
- Milk - 100 ml
- Garlic - 1 clove
- Walnuts - 200 grams
- For the salsa di noci -
- Nutmeg - A pinch
- Egg - 1
- Grated parmesan cheese - 50 grams
- Spinach - 200 grams
- Ricotta cheese - 200 grams
- Pasta dough - 500 grams
- For the pansotti -
Let's Get Started
- Prepare the pasta dough and let it rest for 30 minutes.
- Cook the spinach, squeeze out the excess water and chop it finely.
- Mix the spinach with the ricotta, Parmesan, egg, nutmeg, salt and pepper.
- Roll out the pasta dough and cut out circles. Place a spoonful of the filling on each circle, fold it over and seal the edges.
- To make the sauce, soak the walnuts and garlic in the milk for 30 minutes. Then blend them with the olive oil until you have a creamy sauce. Season with salt and pepper.
- Cook the pansotti in boiling salted water for a few minutes until they rise to the surface. Drain them and serve with the walnut sauce.
