  1. Prepare the pasta dough and let it rest for 30 minutes.
  2. Cook the spinach, squeeze out the excess water and chop it finely.
  3. Mix the spinach with the ricotta, Parmesan, egg, nutmeg, salt and pepper.
  4. Roll out the pasta dough and cut out circles. Place a spoonful of the filling on each circle, fold it over and seal the edges.
  5. To make the sauce, soak the walnuts and garlic in the milk for 30 minutes. Then blend them with the olive oil until you have a creamy sauce. Season with salt and pepper.
  6. Cook the pansotti in boiling salted water for a few minutes until they rise to the surface. Drain them and serve with the walnut sauce.
