Let's Get Started

  1. Preheat the oven to 180°C and line a square baking tin with baking paper.
  2. Combine the melted butter, sugar, cocoa powder, flour, and egg in a bowl. Press the mixture into the base of the prepared tin.
  3. Bake for 10 minutes, then remove from the oven and allow to cool.
  4. To make the mint filling, combine the peppermint extract, icing sugar, and milk in a bowl. Spread the filling over the cooled base.
  5. Melt the dark chocolate and pour over the mint filling, spreading it evenly with a spatula.
  6. Refrigerate for at least 2 hours, or until the chocolate is set.
  7. Cut into squares and serve.
