Mint Slice
A deliciously refreshing mint slice with a biscuit base, creamy mint filling, and a chocolate topping.
Ingredients - Serves 16
- Dark chocolate - 200g
- Milk - 2 tablespoons
- Icing sugar - 2 cups
- Peppermint extract - 1 teaspoon
- Egg - 1
- Flour - 1 1/4 cups
- Cocoa powder - 1/4 cup
- Sugar - 1/2 cup
- Butter - 125g, melted
Let's Get Started
- Preheat the oven to 180°C and line a square baking tin with baking paper.
- Combine the melted butter, sugar, cocoa powder, flour, and egg in a bowl. Press the mixture into the base of the prepared tin.
- Bake for 10 minutes, then remove from the oven and allow to cool.
- To make the mint filling, combine the peppermint extract, icing sugar, and milk in a bowl. Spread the filling over the cooled base.
- Melt the dark chocolate and pour over the mint filling, spreading it evenly with a spatula.
- Refrigerate for at least 2 hours, or until the chocolate is set.
- Cut into squares and serve.
