Panellets
Panellets are traditional Catalan cookies made with marzipan and pine nuts, typically served on All Saints' Day.
Ingredients - Serves 30
- Pine nuts - 200 grams
- Lemon zest - 1 teaspoon
- Egg - 1, beaten
- Potato - 1 medium, boiled and mashed
- Almond flour - 250 grams
- Sugar - 200 grams
Let's Get Started
- In a bowl, mix together the sugar, almond flour, mashed potato, and lemon zest until well combined.
- Shape the mixture into small balls, about the size of a walnut.
- Dip each ball into the beaten egg, then roll in the pine nuts to coat.
- Place the balls on a baking sheet lined with parchment paper.
- Preheat the oven to 200°C (390°F).
- Bake the panellets for 10-15 minutes, or until golden brown.
- Allow the panellets to cool before serving.
