Pan Seared T Bone Steak with Herb Roasted Potatoes and Sautéed Green Beans

Ingredients - Serves 2
- Green beans - 1 pound, trimmed
- Rosemary - 1 tablespoon, chopped
- Potatoes - 1 pound, cut into 1-inch pieces
- Garlic - 2 cloves, minced
- Butter - 2 tablespoons
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- T-bone steak - 1 (2-inch thick)
Let's Get Started
- Preheat the oven to 400°F. Toss the potatoes with 1 tablespoon of olive oil, rosemary, salt, and pepper. Spread on a baking sheet and roast for 30 minutes, or until crispy and golden.
- While the potatoes are roasting, season the steak with salt and pepper. Heat 1 tablespoon of olive oil in a skillet over high heat. Add the steak and sear for 2 minutes on each side.
- Reduce the heat to medium, add the butter and garlic to the skillet, and baste the steak for 1-2 minutes. Remove the steak from the skillet and let it rest for 5 minutes.
- In the same skillet, add the green beans and sauté for 5-7 minutes, or until tender. Season with salt and pepper.
- Serve the steak with the roasted potatoes and sautéed green beans.
