Pan Roasted Halibut with Clams

Ingredients - Serves 4
- Lemon - 1, juiced
- Parsley - 1/4 cup, chopped
- Clams - 2 pounds, scrubbed
- White wine - 1/2 cup
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Halibut fillets - 4 (6 ounce)
Let's Get Started
- Season the halibut fillets with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat.
- Add the halibut and cook until golden brown on both sides, about 4 minutes per side. Remove the halibut from the skillet and set aside.
- In the same skillet, add the garlic and cook until fragrant, about 1 minute.
- Add the white wine and bring to a simmer.
- Add the clams, cover the skillet, and cook until the clams open, about 5-7 minutes.
- Return the halibut to the skillet and cook until the fish is cooked through, about 2-3 minutes.
- Sprinkle the dish with the chopped parsley and lemon juice before serving.
