Pain Au Chocolat

Ingredients - Serves 12
- Dark chocolate - 200 grams
- Butter - 280 grams
- Milk - 140 milliliters
- Water - 140 milliliters
- Instant yeast - 15 grams
- Salt - 10 grams
- Sugar - 50 grams
- All-purpose flour - 500 grams
Let's Get Started
- In a large bowl, combine the flour, sugar, salt, and yeast.
- Add the water and milk, and mix until a dough forms.
- Knead the dough on a floured surface for about 10 minutes, or until it's smooth and elastic.
- Roll the dough into a rectangle, and spread the butter over the top two-thirds of it.
- Fold the dough into thirds, like a letter, and then roll it out again.
- Repeat this process two more times, then wrap the dough in plastic wrap and refrigerate it for at least 2 hours.
- Preheat your oven to 200°C (392°F).
- Roll out the dough one last time, and cut it into 12 rectangles.
- Place a piece of chocolate at one end of each rectangle, and roll the dough up around it.
- Place the pastries on a baking sheet, and bake them for 15-20 minutes, or until they're golden brown.
- Let the pastries cool for a few minutes before serving.
