Let's Get Started

  1. Heat the olive oil in a large paella pan or skillet over medium heat.
  2. Add the chicken thighs and chorizo and cook until browned, about 10 minutes.
  3. Remove the chicken and chorizo from the pan and set aside.
  4. In the same pan, add the onion, garlic, and bell pepper and cook until softened, about 5 minutes.
  5. Add the rice and saffron to the pan and stir to coat the rice in the oil and vegetables.
  6. Return the chicken and chorizo to the pan and add the chicken broth.
  7. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 20 minutes.
  8. Add the peas to the pan and cook for an additional 10 minutes, until the rice is tender and the liquid has been absorbed.
  9. Serve the paella hot with lemon wedges on the side.
