- Lemon wedges - For serving
- Frozen peas - 1 cup
- Chicken broth - 4 cups
- Saffron threads - 1 pinch
- Short-grain rice - 2 cups
- Red bell pepper - 1, sliced
- Garlic - 4 cloves, minced
- Onion - 1, finely chopped
- Chorizo sausage - 1 cup, sliced
- Chicken thighs - 6, bone-in and skin-on
- Olive oil - 3 tablespoons
Let's Get Started
- Heat the olive oil in a large paella pan or skillet over medium heat.
- Add the chicken thighs and chorizo and cook until browned, about 10 minutes.
- Remove the chicken and chorizo from the pan and set aside.
- In the same pan, add the onion, garlic, and bell pepper and cook until softened, about 5 minutes.
- Add the rice and saffron to the pan and stir to coat the rice in the oil and vegetables.
- Return the chicken and chorizo to the pan and add the chicken broth.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 20 minutes.
- Add the peas to the pan and cook for an additional 10 minutes, until the rice is tender and the liquid has been absorbed.
- Serve the paella hot with lemon wedges on the side.
