Pad Thai Stir Fry
This Pad Thai Stir Fry is a classic Thai dish made with rice noodles, shrimp, tofu, and a flavorful sauce.
Ingredients - Serves 4
- Cilantro - 1/4 cup, chopped
- Lime wedges - 4
- Peanuts - 1/4 cup, chopped
- Green onions - 4, sliced
- Bean sprouts - 1 cup
- Eggs - 2, beaten
- Garlic - 3 cloves, minced
- Vegetable oil - 2 tablespoons
- Firm tofu - 8 oz, cubed
- Shrimp - 1 lb, peeled and deveined
- Rice noodles - 8 oz
Let's Get Started
- Cook the rice noodles according to package instructions. Drain and set aside.
- In a large wok or skillet, heat the vegetable oil over medium-high heat.
- Add the minced garlic and cook for 1 minute until fragrant.
- Add the shrimp and tofu to the wok and stir fry for 2-3 minutes until the shrimp is pink and cooked through.
- Push the shrimp and tofu to one side of the wok and pour the beaten eggs into the other side. Scramble the eggs until cooked.
- Add the cooked rice noodles to the wok and toss everything together.
- Pour the Pad Thai sauce over the noodles and stir fry for an additional 2-3 minutes until everything is well coated.
- Add the bean sprouts and green onions to the wok and toss to combine.
- Remove from heat and garnish with chopped peanuts and cilantro.
- Serve hot with lime wedges on the side.
