Pad Thai Noodle Wraps

Ingredients - Serves 4
- Tortillas - 4, large
- Pad thai sauce - 1/4 cup
- Vegetable oil - 2 tablespoons
- Lime - 1, cut into wedges
- Fresh cilantro - 1/4 cup, chopped
- Peanuts - 1/4 cup, chopped
- Green onions - 4, thinly sliced
- Bean sprouts - 1 cup
- Garlic - 3 cloves, minced
- Eggs - 2, beaten
- Shrimp - 8 oz, peeled and deveined
- Chicken breast - 2, boneless and skinless, thinly sliced
- Rice noodles - 8 oz
Let's Get Started
- Cook the rice noodles according to package instructions. Drain and set aside.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the chicken and shrimp to the skillet and cook until they are cooked through, about 5-6 minutes. Remove from the skillet and set aside.
- In the same skillet, add another tablespoon of vegetable oil and the minced garlic. Cook for 1 minute until fragrant.
- Push the garlic to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until cooked.
- Add the cooked rice noodles, bean sprouts, green onions, peanuts, and Pad Thai sauce to the skillet. Toss everything together until well combined and heated through.
- Warm the tortillas in a separate skillet or microwave.
- Divide the Pad Thai mixture evenly among the tortillas. Sprinkle with fresh cilantro and squeeze lime juice over the top.
- Fold the tortillas tightly to form wraps.
- Serve the Pad Thai Noodle Wraps with extra lime wedges on the side.
