Bok Choy and Shrimp Pad Thai

Ingredients - Serves 4

Let's Get Started

  1. Cook the pad Thai noodles according to package instructions. Drain and set aside.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the shrimp and cook until pink and cooked through, about 2-3 minutes per side. Remove from the skillet and set aside.
  4. In the same skillet, add another tablespoon of vegetable oil. Add the minced garlic and cook for 1 minute.
  5. Add the chopped bok choy and cook until wilted, about 2-3 minutes.
  6. Push the bok choy to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until cooked.
  7. Add the cooked noodles, cooked shrimp, bean sprouts, green onions, and peanuts to the skillet. Pour the pad Thai sauce over the ingredients.
  8. Toss everything together until well combined and heated through.
  9. Serve the pad Thai hot, garnished with chopped cilantro and lime wedges.
