Bok Choy and Shrimp Pad Thai
This delicious pad thai recipe combines the flavors of bok choy, shrimp, and traditional pad thai sauce.
Ingredients - Serves 4
- Pad thai sauce - 1/4 cup
- Vegetable oil - 2 tablespoons
- Cilantro - 1/4 cup, chopped
- Lime - 1, cut into wedges
- Peanuts - 1/4 cup, chopped
- Green onions - 4, sliced
- Bean sprouts - 1 cup
- Eggs - 2, beaten
- Garlic - 3 cloves, minced
- Bok choy - 4 cups, chopped
- Shrimp - 1 pound, peeled and deveined
- Pad thai noodles - 8 ounces
Let's Get Started
- Cook the pad Thai noodles according to package instructions. Drain and set aside.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the shrimp and cook until pink and cooked through, about 2-3 minutes per side. Remove from the skillet and set aside.
- In the same skillet, add another tablespoon of vegetable oil. Add the minced garlic and cook for 1 minute.
- Add the chopped bok choy and cook until wilted, about 2-3 minutes.
- Push the bok choy to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until cooked.
- Add the cooked noodles, cooked shrimp, bean sprouts, green onions, and peanuts to the skillet. Pour the pad Thai sauce over the ingredients.
- Toss everything together until well combined and heated through.
- Serve the pad Thai hot, garnished with chopped cilantro and lime wedges.
