Pacific Cod Tacos
These delicious tacos are filled with flaky Pacific cod, fresh slaw, and a creamy avocado sauce.
Ingredients - Serves 4
- Salt and pepper - To taste
- Cilantro - 1/4 cup, chopped
- Lime - 1, juiced
- Avocado - 1, ripe
- Cabbage slaw - 2 cups
- Corn tortillas - 8
- Taco seasoning - 1 packet
- Olive oil - 2 tablespoons
- Pacific cod fillets - 1 pound
Let's Get Started
- Preheat the oven to 400°F and line a baking sheet with foil.
- Place the cod fillets on the baking sheet and drizzle with olive oil. Sprinkle the taco seasoning evenly over the fillets.
- Bake for 10 minutes, or until the fish is flaky and cooked through.
- While the fish is cooking, warm the tortillas in a dry skillet over medium heat.
- In a bowl, mash the avocado and mix in the lime juice, cilantro, salt, and pepper to make the avocado sauce.
- To assemble the tacos, spread a spoonful of avocado sauce on each tortilla. Top with a portion of the cooked fish and some cabbage slaw.
