Oyster Omelette

Ingredients - Serves 2

Let's Get Started

  1. In a small bowl, mix the potato starch and water to make a slurry. Set aside.
  2. In a separate bowl, beat the eggs and season with salt and pepper.
  3. Heat 1 tablespoon of vegetable oil in a non-stick pan over medium heat.
  4. Add the minced garlic and chopped green onions to the pan and sauté for 1-2 minutes.
  5. Add the fresh oysters to the pan and cook for 2-3 minutes, until they start to curl at the edges.
  6. Push the oysters to one side of the pan and pour the beaten eggs into the other side.
  7. Cook the eggs for 1-2 minutes, then gently fold the oysters into the eggs.
  8. Pour the potato starch slurry over the omelette and cook for another 1-2 minutes, until the sauce thickens.
  9. Drizzle the soy sauce and fish sauce over the omelette and cook for an additional 1 minute.
  10. Remove from heat and transfer the omelette to a serving plate.
  11. Garnish with additional chopped green onions, if desired.
  12. Serve hot and enjoy!
