Oyster Omelette
This Oyster Omelette is a popular Taiwanese street food dish made with fresh oysters, eggs, and a flavorful sauce.
Ingredients - Serves 2
- Salt and pepper - To taste
- Vegetable oil - 2 tablespoons
- Fish sauce - 1 tablespoon
- Soy sauce - 2 tablespoons
- Green onions - 2 stalks, chopped
- Garlic - 2 cloves, minced
- Water - 2 tablespoons
- Potato starch - 2 tablespoons
- Eggs - 4
- Fresh oysters - 12
Let's Get Started
- In a small bowl, mix the potato starch and water to make a slurry. Set aside.
- In a separate bowl, beat the eggs and season with salt and pepper.
- Heat 1 tablespoon of vegetable oil in a non-stick pan over medium heat.
- Add the minced garlic and chopped green onions to the pan and sauté for 1-2 minutes.
- Add the fresh oysters to the pan and cook for 2-3 minutes, until they start to curl at the edges.
- Push the oysters to one side of the pan and pour the beaten eggs into the other side.
- Cook the eggs for 1-2 minutes, then gently fold the oysters into the eggs.
- Pour the potato starch slurry over the omelette and cook for another 1-2 minutes, until the sauce thickens.
- Drizzle the soy sauce and fish sauce over the omelette and cook for an additional 1 minute.
- Remove from heat and transfer the omelette to a serving plate.
- Garnish with additional chopped green onions, if desired.
- Serve hot and enjoy!
