  2. In a large Dutch oven, melt the butter over medium heat. Add the veal shanks and cook until browned on all sides. Remove from the pot and set aside.
  3. In the same pot, add the onion, carrot, celery, and garlic. Cook until the vegetables are softened.
  4. Add the white wine to the pot, scraping up any browned bits from the bottom.
  5. Stir in the beef broth, tomato paste, and bay leaves. Season with salt and pepper.
  6. Return the veal shanks to the pot, nestling them into the liquid. Cover and simmer for about 2 hours, or until the meat is tender.
  7. Serve the ossobuco with a sprinkling of gremolata and a side of risotto alla milanese.
