Orxata
Orxata, or Horchata, is a sweet, creamy, and refreshing drink originally from Valencia, Spain. It's made from tigernuts, sugar, and water.
Ingredients - Serves 4
- Lemon zest - 1 teaspoon
- Cinnamon stick - 1
- Sugar - 1/2 cup
- Water - 4 cups
- Tigernuts - 1 cup
Let's Get Started
- Soak the tigernuts in water for 24-48 hours.
- Drain the tigernuts and blend them with 2 cups of fresh water until smooth.
- Strain the mixture through a cheesecloth or fine mesh strainer into a large bowl.
- Add the sugar, cinnamon stick, and lemon zest to the tigernut milk and stir until the sugar is dissolved.
- Chill the orxata in the refrigerator for at least 2 hours before serving.
- Serve the orxata over ice and enjoy!
