Ingredients - Serves 4

Let's Get Started

  1. Soak the tigernuts in water for 24-48 hours.
  2. Drain the tigernuts and blend them with 2 cups of fresh water until smooth.
  3. Strain the mixture through a cheesecloth or fine mesh strainer into a large bowl.
  4. Add the sugar, cinnamon stick, and lemon zest to the tigernut milk and stir until the sugar is dissolved.
  5. Chill the orxata in the refrigerator for at least 2 hours before serving.
  6. Serve the orxata over ice and enjoy!
