Oregano Beef Stew
This hearty beef stew is flavored with oregano and packed with tender beef, vegetables, and rich broth.
Ingredients - Serves 6
- Salt and pepper - To taste
- Bay leaf - 1
- Dried oregano - 2 teaspoons
- Beef broth - 4 cups
- Tomato paste - 2 tablespoons
- Potatoes - 3 medium, diced
- Carrots - 3 medium, sliced
- Garlic - 3 cloves, minced
- Onion - 1 large, chopped
- Olive oil - 2 tablespoons
- Beef stew meat - 2 pounds, cubed
Let's Get Started
- In a large pot, heat the olive oil over medium heat.
- Add the beef stew meat and cook until browned on all sides. Remove the meat from the pot and set aside.
- In the same pot, add the chopped onion and minced garlic. Cook until the onion is translucent.
- Add the carrots, potatoes, tomato paste, beef broth, dried oregano, bay leaf, salt, and pepper. Stir to combine.
- Return the browned beef stew meat to the pot and bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and simmer for 2-3 hours, or until the beef is tender.
- Remove the bay leaf before serving.
- Serve the oregano beef stew hot and enjoy!
