Onion Roasted Chicken

Ingredients - Serves 4

Let's Get Started

  1. Preheat your oven to 425°F (220°C).
  2. Place the sliced onions in the bottom of a roasting pan.
  3. In a small bowl, mix together the minced garlic, olive oil, salt, pepper, rosemary, and thyme.
  4. Rub the garlic and herb mixture all over the chicken, both inside and out.
  5. Place the chicken on top of the onions in the roasting pan.
  6. Roast the chicken in the preheated oven for about 1 hour and 30 minutes, or until the juices run clear when you cut between a leg and thigh.
  7. Remove the chicken from the oven and let it rest for 10 minutes before carving.
