Onion Roasted Chicken
A savory dish featuring a whole chicken roasted with a delicious blend of onions and herbs.
Ingredients - Serves 4
- Thyme - 1 tablespoon, fresh or dried
- Rosemary - 1 tablespoon, fresh or dried
- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Olive oil - 2 tablespoons
- Garlic - 4 cloves, minced
- Onion - 1 large, sliced
- Whole chicken - 1 (about 4 pounds)
Let's Get Started
- Preheat your oven to 425°F (220°C).
- Place the sliced onions in the bottom of a roasting pan.
- In a small bowl, mix together the minced garlic, olive oil, salt, pepper, rosemary, and thyme.
- Rub the garlic and herb mixture all over the chicken, both inside and out.
- Place the chicken on top of the onions in the roasting pan.
- Roast the chicken in the preheated oven for about 1 hour and 30 minutes, or until the juices run clear when you cut between a leg and thigh.
- Remove the chicken from the oven and let it rest for 10 minutes before carving.
