Let's Get Started

  1. Preheat the oven to 325°F.
  2. Season the beef with salt and pepper.
  3. Heat the olive oil in a large Dutch oven over medium-high heat. Add the beef and cook until browned on all sides, about 10 minutes.
  4. Remove the beef from the pot and set aside.
  5. Add the onions and garlic to the pot and cook until softened, about 5 minutes.
  6. Add the beef broth, wine, thyme, and bay leaf to the pot. Bring to a simmer.
  7. Return the beef to the pot, cover, and transfer to the oven.
  8. Braise for 2.5-3 hours, or until the beef is tender.
  9. Remove the thyme and bay leaf before serving.
