Onion and Spinach Stuffed Chicken

  1. Preheat the oven to 375°F.
  2. In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Add the chopped spinach to the skillet and cook until wilted. Season with salt, pepper, and Italian seasoning.
  4. Using a sharp knife, make a pocket in each chicken breast by cutting horizontally through the side of the breast, being careful not to cut all the way through.
  5. Stuff each chicken breast with the cooked onion and spinach mixture, then sprinkle with grated Parmesan cheese.
  6. Secure the opening of each chicken breast with toothpicks to hold the filling in place.
  7. Season the stuffed chicken breasts with salt, pepper, and additional Italian seasoning, if desired.
  8. Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through and no longer pink in the center.
  9. Remove the toothpicks before serving.
