Onion and Herb Roasted Chicken

  1. Preheat the oven to 375°F (190°C).
  2. Rinse the chicken and pat it dry with paper towels.
  3. Season the chicken with salt and black pepper, both inside and outside.
  4. In a roasting pan, place the sliced onions, minced garlic, rosemary, and thyme.
  5. Drizzle the olive oil over the onions and herbs, and toss to coat.
  6. Place the seasoned chicken on top of the onion and herb mixture in the roasting pan.
  7. Roast the chicken in the preheated oven for about 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C).
  8. Baste the chicken with the pan juices every 30 minutes to keep it moist and flavorful.
  9. Once cooked, remove the chicken from the oven and let it rest for 10 minutes before carving.
  10. Serve the onion and herb roasted chicken with the caramelized onions and pan juices as a delicious sauce.
