Onion and Courgette Soup

Ingredients - Serves 4

Let's Get Started

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onions and garlic and cook until the onions are soft, about 5 minutes.
  3. Add the courgettes and cook for another 5 minutes, until they start to soften.
  4. Add the vegetable broth, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 20 minutes.
  5. Use an immersion blender to puree the soup until smooth. If you don't have an immersion blender, you can transfer the soup to a regular blender in batches and puree it that way.
  6. Taste and adjust the seasoning if necessary. Serve hot.
