Onion and Courgette Soup
A hearty and healthy soup made with fresh onions and courgettes, perfect for a light lunch or dinner.
Ingredients - Serves 4
- Salt and pepper - To taste
- Vegetable broth - 4 cups
- Garlic - 2 cloves, minced
- Courgettes - 2 large, chopped
- Onions - 2 large, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onions and garlic and cook until the onions are soft, about 5 minutes.
- Add the courgettes and cook for another 5 minutes, until they start to soften.
- Add the vegetable broth, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 20 minutes.
- Use an immersion blender to puree the soup until smooth. If you don't have an immersion blender, you can transfer the soup to a regular blender in batches and puree it that way.
- Taste and adjust the seasoning if necessary. Serve hot.
