Onion and Bacon Stuffed Pork Chops

  1. Preheat the oven to 375°F.
  2. In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and cook until the onion is soft and translucent.
  3. Remove the skillet from heat and stir in the crumbled bacon and dried thyme. Season with salt and pepper to taste.
  4. Using a sharp knife, make a pocket in each pork chop by cutting horizontally through the side of the chop, being careful not to cut all the way through.
  5. Stuff each pork chop with the onion and bacon mixture, pressing it firmly into the pocket.
  6. Season the outside of the pork chops with salt and pepper.
  7. Heat a skillet over medium-high heat and add a drizzle of olive oil. Sear the stuffed pork chops for 2-3 minutes on each side, until browned.
  8. Transfer the seared pork chops to a baking dish and bake in the preheated oven for 15-20 minutes, or until the internal temperature reaches 145°F.
  9. Remove from the oven and let the pork chops rest for a few minutes before serving.
