Onion and Bacon Stuffed Pork Chops
These juicy pork chops are stuffed with a flavorful mixture of onions and bacon, creating a delicious and satisfying main course.
Ingredients - Serves 4
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Dried thyme - 1 teaspoon
- Garlic - 2 cloves, minced
- Bacon - 4 slices, cooked and crumbled
- Onion - 1 large, finely chopped
- Pork chops - 4 boneless, thick-cut
Let's Get Started
- Preheat the oven to 375°F.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and cook until the onion is soft and translucent.
- Remove the skillet from heat and stir in the crumbled bacon and dried thyme. Season with salt and pepper to taste.
- Using a sharp knife, make a pocket in each pork chop by cutting horizontally through the side of the chop, being careful not to cut all the way through.
- Stuff each pork chop with the onion and bacon mixture, pressing it firmly into the pocket.
- Season the outside of the pork chops with salt and pepper.
- Heat a skillet over medium-high heat and add a drizzle of olive oil. Sear the stuffed pork chops for 2-3 minutes on each side, until browned.
- Transfer the seared pork chops to a baking dish and bake in the preheated oven for 15-20 minutes, or until the internal temperature reaches 145°F.
- Remove from the oven and let the pork chops rest for a few minutes before serving.
