Onion and Aubergine Tart

Ingredients - Serves 6

Let's Get Started

  1. Preheat the oven to 200°C.
  2. Heat the olive oil in a large pan over medium heat. Add the onions and cook until caramelized, about 15 minutes.
  3. Add the aubergine, garlic, thyme, salt, and pepper to the pan. Cook until the aubergine is soft, about 10 minutes.
  4. Roll out the puff pastry on a floured surface. Transfer to a baking sheet.
  5. Spread the onion and aubergine mixture over the pastry, leaving a border around the edges. Brush the edges with the beaten egg.
  6. Sprinkle the parmesan cheese over the tart.
  7. Bake for 20-25 minutes, or until the pastry is golden and the cheese is melted.
  8. Allow to cool for a few minutes before slicing and serving.
