Onion and Aubergine Tart
A savory tart filled with caramelized onions, roasted aubergine, and a hint of thyme. Perfect for a light lunch or dinner.
Ingredients - Serves 6
- Parmesan cheese - 1/2 cup, grated
- Egg - 1, beaten
- Puff pastry - 1 sheet
- Salt and pepper - To taste
- Thyme - 1 teaspoon
- Garlic - 2 cloves, minced
- Aubergine - 1 large, diced
- Onions - 2 large, thinly sliced
- Olive oil - 2 tablespoons
Let's Get Started
- Preheat the oven to 200°C.
- Heat the olive oil in a large pan over medium heat. Add the onions and cook until caramelized, about 15 minutes.
- Add the aubergine, garlic, thyme, salt, and pepper to the pan. Cook until the aubergine is soft, about 10 minutes.
- Roll out the puff pastry on a floured surface. Transfer to a baking sheet.
- Spread the onion and aubergine mixture over the pastry, leaving a border around the edges. Brush the edges with the beaten egg.
- Sprinkle the parmesan cheese over the tart.
- Bake for 20-25 minutes, or until the pastry is golden and the cheese is melted.
- Allow to cool for a few minutes before slicing and serving.
