Ingredients - Serves 4
- Vegetable oil - For frying
- Breadcrumbs - 1 cup
- Salt and pepper - To taste
- Soy sauce - 1 tablespoon
- Egg - 1
- Carrot - 1 medium, finely chopped
- Onion - 1 medium, finely chopped
- Okara (soy pulp) - 2 cups

- In a large bowl, combine the okara, onion, carrot, egg, soy sauce, salt, and pepper. Mix well until the ingredients are evenly distributed.
- Shape the mixture into small patties and coat each one in breadcrumbs.
- Heat the vegetable oil in a frying pan over medium heat.
- Fry the croquettes in the oil until they are golden brown on both sides, about 3-4 minutes per side.
- Drain the croquettes on paper towels to remove excess oil.
