Oha Soup
Oha soup is a traditional Nigerian soup made with oha leaves, assorted meat, and traditional spices.
Ingredients - Serves 6
- Seasoning cubes - 2
- Salt - To taste
- Pepper - 2-3 Scotch bonnet peppers, chopped
- Onions - 1 medium-sized, chopped
- Crayfish - 2 tablespoons
- Palm oil - 1/2 cup
- Dry fish - 100g
- Stockfish - 100g
- Assorted meat (beef, cow foot, tripe, etc.) - 500g
- Oha leaves - 2 cups, shredded
Let's Get Started
- Wash and season the assorted meat with salt and seasoning cubes. Cook in a pot with water until tender.
- Add the stockfish and dry fish to the pot and continue cooking until they are soft.
- In a separate pot, heat the palm oil and add the chopped onions. Sauté until the onions are translucent.
- Add the chopped pepper and crayfish to the pot and cook for a few minutes.
- Pour the cooked assorted meat, stockfish, and dry fish into the pot with the sautéed ingredients.
- Add water to achieve the desired consistency of the soup.
- Season with salt and additional seasoning cubes if needed. Allow the soup to simmer for about 10 minutes.
- Add the shredded oha leaves to the pot and stir well. Let it cook for another 5 minutes.
- Taste and adjust the seasoning if necessary.
- Serve hot with your choice of swallow (e.g., fufu, pounded yam, or eba).
