Ofe Akwu
Ofe Akwu is a traditional Nigerian soup made with palm fruit extract, assorted meats, and traditional spices.
Ingredients - Serves 6
- Palm oil - 1/4 cup
- Seasoning cubes - 2
- Salt - To taste
- Pepper - To taste
- Crayfish - 2 tablespoons, ground
- Onions - 1 medium, chopped
- Utazi leaves - 1/2 cup, sliced
- Uziza leaves - 1 cup, chopped
- Dry fish - 100g
- Stockfish - 100g
- Assorted meats (beef, goat, or chicken) - 500g
- Palm fruit extract - 2 cups
Let's Get Started
- In a large pot, boil the assorted meats with onions, seasoning cubes, and salt until tender.
- Add the stockfish and dry fish to the pot and continue boiling for another 10 minutes.
- In a separate pot, heat the palm oil and add the chopped onions. Sauté until the onions are translucent.
- Add the palm fruit extract to the pot and cook for about 15 minutes, stirring occasionally.
- Add the cooked meats, stockfish, and dry fish to the pot with the palm fruit extract.
- Add the ground crayfish, pepper, and salt to taste. Stir well.
- Cover the pot and let the soup simmer for about 20 minutes, allowing the flavors to blend together.
- Add the chopped uziza leaves and sliced utazi leaves to the pot. Stir well and cook for another 5 minutes.
- Taste and adjust the seasoning if needed.
- Serve hot with your choice of swallow (e.g., pounded yam, fufu, or eba).
