Oeuf Mayonnaise
Oeuf Mayonnaise is a classic French dish, featuring hard-boiled eggs topped with homemade mayonnaise and often served as a starter.
Ingredients - Serves 4
- Chives - 1 tablespoon, chopped
- Pepper - To taste
- Salt - To taste
- Olive oil - 1/2 cup
- White wine vinegar - 1 tablespoon
- Dijon mustard - 1 teaspoon
- Eggs - 4 large
Let's Get Started
- Place the eggs in a pot of cold water. Bring the water to a boil, then reduce the heat and simmer for 10 minutes.
- While the eggs are cooking, make the mayonnaise. In a bowl, whisk together the mustard and vinegar. Slowly whisk in the olive oil until the mixture emulsifies and becomes thick. Season with salt and pepper.
- Once the eggs are done, drain the water and let them cool. Peel the eggs and cut them in half.
- Arrange the eggs on a plate and spoon the mayonnaise over them. Sprinkle with chopped chives before serving.
