Greek Yogurt Topped Potatoes

Ingredients - Serves 4

Let's Get Started

  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes and pat them dry. Prick several holes in them with a fork.
  3. Rub the potatoes with olive oil, salt, and pepper.
  4. Place the potatoes on a baking sheet and bake for about 1 hour, or until they are soft and easily pierced with a fork.
  5. Let the potatoes cool for a few minutes, then cut a slit in the top of each one.
  6. Spoon Greek yogurt into each potato, then top with chives.
  7. Serve the potatoes hot, with extra Greek yogurt and chives on the side if desired.
