Greek Yogurt Topped Potatoes
A healthy and delicious side dish, these Greek yogurt topped potatoes are a great alternative to traditional sour cream topped potatoes.
Ingredients - Serves 4
- Chives - 2 tablespoons, chopped
- Greek yogurt - 1 cup
- Pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Olive oil - 2 tablespoons
- Potatoes - 4 large
Let's Get Started
- Preheat your oven to 400°F (200°C).
- Wash the potatoes and pat them dry. Prick several holes in them with a fork.
- Rub the potatoes with olive oil, salt, and pepper.
- Place the potatoes on a baking sheet and bake for about 1 hour, or until they are soft and easily pierced with a fork.
- Let the potatoes cool for a few minutes, then cut a slit in the top of each one.
- Spoon Greek yogurt into each potato, then top with chives.
- Serve the potatoes hot, with extra Greek yogurt and chives on the side if desired.
