Nopal Salad
This refreshing Mexican salad is made with grilled cactus paddles, tomatoes, onions, and cilantro.
Ingredients - Serves 4
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Lime - 1, juiced
- Cilantro - 1/2 cup, chopped
- Onion - 1 medium, diced
- Tomatoes - 2 large, diced
- Nopales (cactus paddles) - 4, cleaned and grilled
Let's Get Started
- Preheat your grill or grill pan over medium heat.
- Grill the nopales until they are tender and have grill marks, about 5 minutes per side.
- Remove the nopales from the grill and let them cool. Once cool, dice them into bite-sized pieces.
- In a large bowl, combine the diced nopales, tomatoes, onion, and cilantro.
- In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Serve the salad chilled or at room temperature.
