Ingredients - Serves 4
- Vegetable oil - For frying
- Water - 1/2 cup
- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Garlic - 2 cloves, minced
- Green onions - 2 stalks, finely chopped
- Rice flour - 1/2 cup
- All-purpose flour - 1 cup
- Fresh corn kernels - 2 cups
Let's Get Started
- In a large bowl, combine the all-purpose flour, rice flour, salt, and black pepper.
- Add the corn kernels, green onions, and minced garlic to the flour mixture. Mix well to coat the corn evenly.
- Gradually add water to the mixture, stirring until you have a thick batter consistency.
- Heat vegetable oil in a deep pan or pot over medium heat.
- Drop spoonfuls of the corn batter into the hot oil, making sure not to overcrowd the pan.
- Fry the fritters until golden brown and crispy, about 3-4 minutes per side.
- Remove the fritters from the oil and drain on a paper towel-lined plate to remove excess oil.
