Ingredients - Serves 4

Let's Get Started

  1. Preheat your oven to 400°F.
  2. Season the steaks with salt and pepper on both sides.
  3. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the steaks and sear on both sides until browned, about 3 minutes per side. Transfer the steaks to a plate.
  4. In the same skillet, add the Brussels sprouts and potatoes. Season with salt, pepper, and half of the mixed herbs. Cook for 5 minutes, stirring occasionally.
  5. Transfer the skillet to the oven and roast for 20 minutes, or until the vegetables are tender and golden.
  6. In the meantime, heat the remaining olive oil in a small saucepan over medium heat. Add the garlic and remaining herbs and cook for 2 minutes, until fragrant.
  7. Drizzle the herb oil over the steaks and return them to the oven for 5-10 minutes, or until they reach your desired level of doneness.
  8. Serve the steaks with the roasted Brussels sprouts and potatoes on the side.
