Ingredients - Serves 8

Let's Get Started

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
  3. Add the cold cubed butter to the dry ingredients. Use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.
  4. In a small bowl, whisk together the egg and vanilla extract. Pour the egg mixture into the flour mixture and mix until the dough comes together.
  5. Press two-thirds of the dough into the bottom of a greased 9-inch (23 cm) pie dish to form the crust.
  6. In a separate bowl, gently toss the blueberries with lemon juice and cornstarch until well coated.
  7. Spread the blueberry mixture evenly over the crust.
  8. Crumble the remaining dough over the top of the blueberries.
  9. Bake in the preheated oven for 35-40 minutes, or until the crust is golden brown and the blueberries are bubbling.
  10. Remove from the oven and let cool before serving.
  11. Dust with powdered sugar before serving, if desired.
