Mustikkapiirakka
Mustikkapiirakka is a traditional Finnish blueberry pie made with a buttery crust and a sweet blueberry filling.
Ingredients - Serves 8
- Powdered sugar - For dusting
- Cornstarch - 2 tablespoons
- Lemon juice - 1 tablespoon
- Blueberries - 4 cups
- Vanilla extract - 1 teaspoon
- Salt - 1/4 teaspoon
- Baking powder - 1 teaspoon
- Egg - 1
- Unsalted butter - 3/4 cup, cold and cubed
- Granulated sugar - 3/4 cup
- All-purpose flour - 2 cups
Let's Get Started
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
- Add the cold cubed butter to the dry ingredients. Use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.
- In a small bowl, whisk together the egg and vanilla extract. Pour the egg mixture into the flour mixture and mix until the dough comes together.
- Press two-thirds of the dough into the bottom of a greased 9-inch (23 cm) pie dish to form the crust.
- In a separate bowl, gently toss the blueberries with lemon juice and cornstarch until well coated.
- Spread the blueberry mixture evenly over the crust.
- Crumble the remaining dough over the top of the blueberries.
- Bake in the preheated oven for 35-40 minutes, or until the crust is golden brown and the blueberries are bubbling.
- Remove from the oven and let cool before serving.
- Dust with powdered sugar before serving, if desired.
