Mushu Pork
Mushu Pork is a classic Chinese dish made with pork, scrambled eggs, and stir-fried vegetables, all wrapped up in a thin pancake.
Ingredients - Serves 4
- Chinese pancakes - 8
- Hoison sauce - 2 tablespoons
- Soy sauce - 2 tablespoons
- Garlic - 2 cloves, minced
- Green onions - 1/2 cup, chopped
- Mushrooms - 1/2 cup, sliced
- Carrots - 1/2 cup, shredded
- Cabbage - 1 cup, shredded
- Eggs - 4, beaten
- Pork loin - 1/2 pound, thinly sliced
Let's Get Started
- Heat a wok or large skillet over medium-high heat. Add the pork and cook until no longer pink. Remove from the wok and set aside.
- In the same wok, add the beaten eggs and scramble until just set. Remove from the wok and set aside with the pork.
- Add the cabbage, carrots, mushrooms, green onions, and garlic to the wok. Stir-fry for 2-3 minutes, until the vegetables are tender.
- Return the pork and eggs to the wok. Add the soy sauce and hoisin sauce and stir well to combine.
- Warm the Chinese pancakes in a steamer or in the microwave.
- To serve, spread a small amount of hoisin sauce on each pancake, top with the pork and vegetable mixture, and roll up like a burrito.
