Mushroom and Quinoa Burger

Ingredients - Serves 4

Let's Get Started

  1. In a large bowl, combine the cooked quinoa, chopped mushrooms, onion, garlic, breadcrumbs, egg, Worcestershire sauce, Dijon mustard, salt, and pepper. Mix well to combine.
  2. Form the mixture into 4 patties, about 1/2-inch thick.
  3. Heat the olive oil in a skillet over medium heat. Cook the patties for 4-5 minutes per side, or until golden brown and cooked through.
  4. Toast the burger buns if desired.
  5. Spread mayonnaise on the bottom half of each bun. Top with a lettuce leaf, a mushroom and quinoa patty, tomato slices, and avocado slices. Place the top half of the bun on top.
  6. Serve the mushroom and quinoa burgers with your favorite side dish and enjoy!
