Mushroom and Quinoa Burger
These delicious mushroom and quinoa burgers are packed with flavor and make a great vegetarian option for burger lovers.
Ingredients - Serves 4
- Mayonnaise - 4 tablespoons
- Avocado - 1, sliced
- Tomato - 1, sliced
- Lettuce - 4 leaves
- Burger buns - 4
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Dijon mustard - 1 tablespoon
- Worcestershire sauce - 1 tablespoon
- Egg - 1
- Breadcrumbs - 1/2 cup
- Garlic - 2 cloves, minced
- Onion - 1/2 cup, finely chopped
- Mushrooms - 8 ounces, finely chopped
- Quinoa - 1 cup, cooked
Let's Get Started
- In a large bowl, combine the cooked quinoa, chopped mushrooms, onion, garlic, breadcrumbs, egg, Worcestershire sauce, Dijon mustard, salt, and pepper. Mix well to combine.
- Form the mixture into 4 patties, about 1/2-inch thick.
- Heat the olive oil in a skillet over medium heat. Cook the patties for 4-5 minutes per side, or until golden brown and cooked through.
- Toast the burger buns if desired.
- Spread mayonnaise on the bottom half of each bun. Top with a lettuce leaf, a mushroom and quinoa patty, tomato slices, and avocado slices. Place the top half of the bun on top.
