Mushroom and Leek Barley Soup
A hearty and comforting soup made with earthy mushrooms, aromatic leeks, and chewy barley.
Ingredients - Serves 4
- Salt and pepper - To taste
- Thyme - 1 teaspoon, dried
- Vegetable broth - 6 cups
- Barley - 1 cup
- Mushrooms - 2 cups, sliced
- Garlic - 2 cloves, minced
- Leeks - 2, cleaned and sliced
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the leeks and garlic and cook until the leeks are soft, about 5 minutes.
- Add the mushrooms and cook until they release their liquid and become golden, about 10 minutes.
- Add the barley, vegetable broth, thyme, salt, and pepper. Bring to a boil.
- Reduce the heat to low, cover, and simmer for 45 minutes, or until the barley is tender.
- Taste and adjust the seasoning if necessary.
- Serve hot.
