Mushroom and Chickpea Stew

Ingredients - Serves 4

Let's Get Started

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onions and garlic and cook until the onions are soft, about 5 minutes.
  3. Add the mushrooms and cook until they release their liquid and start to brown, about 10 minutes.
  4. Add the chickpeas, vegetable broth, tomato paste, paprika, thyme, salt, and pepper. Bring to a boil.
  5. Reduce the heat and simmer for 30 minutes, or until the stew is thick and the flavors are well combined.
